  2. Prepare of Onion Puree 2 medium Size.
  3. Get of For Dry Roast Masala.

  11. Get 1 1/2 Tbsp of Ginger Garlic Paste.
  12. Provide 1 Cup of Chopped Onions.
  13. Take 1/2 Cup of Mustard Oil.
  14. Provide 1 Tsp of Sugar.
  15. Take 2 of Bay Leaves.
  16. Get 2 of Green Cardamom.
  17. Take 2 of Cloves.
  18. Prepare 1 of Whole Kashmiri Lal Mirch.
  19. Take 1 1/2 of Kashmiri Lal mirch powder.
  20. Get of As per taste Salt.
  21. Get 1/2 Tbsp of Turmeric.
  22. Prepare 4 of Tomatoes Julienned.

Instructions to make Dilkhush Chicken:

  1. In a big wok, heat the oil, add bayleaves, cloves, green cardamom, sugar, and whole Kashmiri lal mirch. Let them crackle.
  2. Add chopped onions, sauté till they are golden brown, add chicken, mix, sauté for 2 minutes, add turmeric powder. Sauté for good 4-5 minutes till the chicken is coated thoroughly in the oil, add onion puree, mix it well and let it sauté for 2-3 minutes.
  3. Chicken would be coated in the onion mix by now, add the ginger garlic paste and sauté it slowly for 3-4 minutes while adding chopped tomatoes as well. Sauté further till the tomatoes are mashed, add the Kashmiri red chili powder at this stage, mix and cover allowing the oil to separate.
  4. Once the red chili powder is incorporated, add the dry roasted powder and salt, mix well, sauté for 2-3 min and then increase the flame. At this stage keep water handy as the high flame sauté will need gradual splash of water so as to avoid burning of gravy..
  5. Sauté on high flame for 5 minutes, then add 1 cup water and cover. Let it simmer away for 5 minutes or till the chicken is done. You can add cream to it later if you like to tone down the spices. Serve it with pulao / Naan/ Rice..
